Southwestern tomato pasta

3 small ripe tomatoes
2 tbsp extra-virgin olive oil
3 cloves garlic, minced
1 jalapeno pepper, seeded and finely chopped
3 tbsp chopped fresh cilantro
1 tbsp fresh lime juice
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp ground white pepper
4 oz angel hair pasta, uncooked
4 oz goat cheese, crumbled
2 tbsp pine nuts, toasted

Prep. Time → 45 min

Cook Time → 10 min

1. Peel tomatoes, coarsely chop over a bowl, reserving juice. Combine tomatoes, reserved juice, olive oil and next 7 ingredients. Cover and let stand at room temperature 1 hour. Cook pasta according to package directions, drain. Serve tomato mixture over pasta; top with goat cheese and pine nuts.
