Spiced tomato and lentil soup

Ingredients for About 4 - 5 servings
1 Onion Chopped
2 Carrots
150g of red lentils washed
2 x 400g Tin of chopped tomatoes
1 tbsp of Cumin
1 tsp of Curry Powder
2 pints (1.2 Litres) of Vegetable stock
Fresh Coriander to serve
Prep. Time → 2 min
Cook Time → 30 min

Directions
1. Lightly Fry the onion
2. Add spices and lentils to pan and stir
3. After 1 min add the Tomatoes
4. Finally add the stock and simmer for 30 mins
5. Blend to best consistency and serve with lots of coriander and soured cream
