Spicy chicken stuffed with feta cheese and salsa

Ingredients

2 chicken breasts
84g of feta cheese (2 HEa’s)
4 tablespoons of salsa (1 syn – may vary depending on nutritional information of salsa used)
1 teaspoon of paprika
1 teaspoon of cumin
1 teaspoon black pepper
juice of a half a lemon
Frylight or Pam Spray

1. Method

2. Preheat oven to 200c or 400f
Slit the chicken breasts on the thickest part, to make a pocket. Stuff each chicken breast with 42g of feta cheese and 2 tablespoons of salsa. Secure with toothpicks.
In a small bowl mix the cumin, paprika and black pepper and sprinkle loosely over each chicken breast.
Spray a frying pan with some Frylight or Pam spray and brown each chicken breast on each side.
Transfer to an oven proof dish, squeeze over the juice of half a lemon and bake in the oven for approx 15-20mins, until the chicken breasts are cooked through, but tender.
Serve with a side of your choice. I served mine with roasted butternut squash and mixed salad leaves.
