Spicy stuffed peppers
Recipe by4 peppers (red and yellow are best)
500g mince (in germany i use gemischt Rind und Schwinefleisch, in england Beef)
a tube of tomato paste
1 large onion
oil
1 teaspoon cayenne pepper
0.5 teaspoon chilli powder
salt
pepper
400 mL vegetable stock (I use knor stock cubes)
Caynenne to taste
cornflour to thicken
Prep. Time → 10 min
Cook Time → 70 min
1. slice heads off peppers and remove seeds and white pith. clean and dry.
2. chop onions finely
3. fry most of the onions in oil and add mince, brown mince breaking up the lumps.
4. add tomato paste ans mix well. add salt and pepper to taste and then mix in the spices. (add more or less chilli depending on how hot you like your food)
5. allow mince mixture to cool a little before filling the peppers and replacing lids.
6. Stand all peppers in a saucepan
7. fry a little of the onions breifly and add vegstock.
8. add the stock and onions to the pan with the peppers and simmer covered on a low heat for about an hour or until the peppers are tender.
9. remove peppers and add cayenne to the liquor
10. season to taste and thicken with the cornflour.
11. serve with rice or potates
