Spicy thai peanut noodles
Recipe by
1 Pound spaghetti, Udon, Soba, or vermicelli noodles
4 Tbs. Creamy peanut butter or Tahini (sesame butter) or 4 tbsp each
4 Tbs. Soy sauce
2 tbs. Toasted sesame oil
2 tbs. Brown sugar
2 tbs. Minced ginger
1/4 c. Sliced green onions
1/2 c. Bean sprouts
1/2 c. Cucumber
1/4 tbs. Red pepper flake
(optional): shredded carrots
1. 1.Cook noodles to desired
dente-ness
2. Meanwhile, whisk together peanut butter and/or tahini, soy, sesame oil, brown sugar, ginger, and red pepper flakes; finely slice green onions; peel and shred cucumber.
3. Drain noodles and mix in sauce and vegetables 4. Refrigerate at least one hour; serve cold
