Spinach & goat cheese stuffed mushrooms

1/2 cup frozen chopped spinach, thawed
and drained well
3 tbsp sun-dried tomatoes, diced
1/3 cup goat cheese, softened
1 tsp dry basil
1/4 tsp garlic powder
8 large portobello mushrooms

Prep. Time → 10 min

Cook Time → 20 min

1. Preheat oven to 400 F
2. In a large bowl mix spinach, diced sun-dried tomatoes, dry basil, garlic powder and softened goat cheese. Mix together and set aside.
3. Remove stems from mushrooms.
4. Place mushrooms on parchment on a baking sheet, cap side down.
5. Stuff each mushroom with spinach goat cheese mixture.
6. Put in oven and bake for 20 minutes until golden brown.
7. Remove from oven and let cooldown for 5 minutes.
