Jam/Lemoncurd
Prep. Time → 100 min
Cook Time → 20-25 min
1. Step1: In a big bowl cream the butter and sugar together with a wooden spoon
until it’s nice and fluffy and are no lumps.
2. Step2: Add the sifted flour to the mixture and fold in.
3. Step3: A bit at a time add the whisked eggs to the mixture and mix in until
light and fluffy.
4. Step4: Split the mixture into 2 bowls or maybe 3 but will work better with 2.
Add a few drops of food colouring in the separate mixtures. Think
about Halloween colours, I find purple, orange, green and black are
good. You can also do this for other occasions with different colours.
5. Step5: Spoon the mixtures into the bun cases, you can layer them and have
mixed coloured cupcakes. Taking into account that white cases turn
clear when cooked and makes a nice affect.
6. Step6: Cook in the oven for 20 – 25 minutes at 180C. A tip – when cupcakes
are ready check by putting a knife into the middle of one and if you pull
it out clean it’s ready; or press a finger lightly on to the middle of the
cupcake and if it sprigs back, it’s ready.
7. Step7: Leave to cool on a cooler tray or cupcake stand.
8. Step8: When cooled with some of the cupcakes with a peeler make a hole in
the middle and fill it. I used jam, lemon curd, chocolate and vanilla
frosting. You can use what you want to though. Press the hole of cake
back in.
9. Step9: Sprinkle some icing sugar on to a chopping board, and roll some
fondant into a ball, softening it with your hands.
10. Step10: Split the fondant 4 ways (or how every many different colours you
want).
11. Step11: Dye the fondant of the colours you want. It’s better to use gel colouring
than liquid. If using the liquid one don’t add too much and make it
runny. Knead the colouring in and mix it in to all the fondant.
12. Step12: Make any designs you want. Think spooky and out of the box.
13. Step13: With a circle cutter, cut a circle into the fondant for the cupcake.
14. Step14: Stick on with what ever filling you used for the middle.
15. Step15: Cut out shapes or mould them and stick on. A tip is to use cocktail
sticks to props or help stand things up.
