Striped bass poached in soy sauce

Ingredients
1/2 cup soy sauce
1/2 cup water
Sea bass filets (or any white fish)
Directions
1. Add soy sauce, water, and 1tbsp sugar to pan. (Garlic, ginger, curry powder, minced chili, scallions, and/or shallots are also good additions.)
2. When the soy sauce is hot, add bass to pan, flesh side down. Add water so the liquid comes almost to the top of the fish.
3. Cook off the liquid until the fish is done.
