Stuffed aubergines

1 tomatoe
1 medium onion
mature cheddar cheese
olive oil
salt pepper
Prep. Time → 10 min
Cook Time → 60 min
1. preheat oven to 180 C, 160C for fan ovens
2. clean aubergines and cut in twi through the stalk.
3. sccop out most of the aubergine, leaving a layer solid enoughto hold shape.
4. smother with olive oil, outside as well, and salt and pepper to taste
5. chop aubergine inards finely, add tomato and onion also finely chopped
6. mix veg and add salt and pepper and a little olive oil
7. replace the veg mix into the aubergine shells
8. bake in oven for 30 mins
9. remove and add cheese in layers (or grated it a finer covering is wanted)
10. replace in oven for another 30 mins
11. serve very hot
