Stuffed mushrooms

1 TB olive oil
24 mushrooms
1 1/2 tsp olive oil
4 cloves garlic
20 mushroom stems
1 rib celery
1/2 small onion
1/2 small red bell pepper
1 oz box chopped, frozen spinach (once thawed squeeze all the liquid out of the spinach using an old, clean dish towel)
Bread crumbs

Prep. Time → 20 min

Cook Time → 20 min

1. Preheat oven to 500 degrees

2. Combine all the ingredients (minus the 24 mushroom heads) & saute with olive oil in a large pan 5-7 minutes

3. Place the stuffing in the food processor for 3-5 minutes

4. Stuff the mushrooms with the stuffing; arrange on a cookie sheet

5. Bake 6-8 minutes
