1/2 red onion , peeled and cut into wedges
2 sliced baby courgettes
8 small cherry tomatoes
8 small black olives
200g of feta cheese
2 tbsp of basil
Dash of olive oil
2 halved red peppers

Directions
1. Mix the onion, courgettes, cherry tomatoes and black olives. Crumble over the feta and add the basil....add olive oil and salt n pepper.
Divide mixture between the pepper halves and wrap each in tin foil. Cook in hot oven until the veggies are tender
