Stuffed peppers
Recipe by2-4 yellow, green, or red peppers
1 can (15 oz) black beans
6-10 slices of bacon, cooked & crumbled
2 cups colby jack cheese
1-2 onions, diced
olive oil
Prep. Time → 30 min
Cook Time → 30 min
1. Cut peppers in half and remove stems and seeds.
2. In a frying pan, warm a bit of olive oil and sauté the chopped onions until golden brown and caramelized.
3. Drain the black beans and add them to the onions, stir and combine until warmed through.
4. Add about a cup of the shredded cheese to melt.
5. Remove from heat and fill each half of the pepper with mixture.
6. Top with crumbed bacon, shredded cheese, and a drizzle of olive oil.
7. Place peppers on the top rack of a hot grill. Close the lid and cook for 30 minutes.
