1. 'Nzalata D'Està is a classic Sicilian summer salad, and as happens with many traditional recipes there aren't any proportions -- you go with what you like.
You'll want freshly chopped mild onion, shredded lettuce hearts, tender celery leaves and stalks, chopped ripe tomatoes, quartered hard-boiled eggs, salted or pickled capers (rinsed), artichocks fillets broken into pieces, fresh oregano, a little salt, pepper, a sprinkling of vinegar, and lots of olive oil.
