Sweet chilli king prawns and noodles

200g of large prawns (I used frozen cooked ones)
200g of egg noodles
4 tablespoons of dark soy sauce
1 tablespoon of sweet chilli sauce (1.5 syns)
1 tablespoon of rice vinegar
grated fresh ginger
2 cloves of garlic crushed
2 spring onions chopped
1 teaspoon of sweetener
1 red pepper sliced
1 green pepper sliced
1 small onion sliced
1 carrot grated into thin strips
handful of mushrooms
non stick spray
1. Method
2. Place the noodles into a saucepan of boiling hot water until soft. Should take about 2 mins, drain and transfer to the side.
In a bowl, mix together the soy sauce, sweet chilli sauce, rice vinegar, ginger, garlic, spring onions and sweetener.
Spray a large wok or frying pan with some non stick spray add stir fry the peppers, onion, carrot and mushrooms for approx 5 mins.
Add the prawns and pour in the bowl of sauce. Stir fry for another 3-4 mins, until prawns are heated through.
Stir in the noodles, and mix thoroughly.
Remove from heat and serve.
