Ingredients
- 28gm (1oz) wholemeal flour (4½ Syns)
- 198gm (7oz)sweet potato, peeled and grated
- 1 medium egg, beaten
- 1tbsp ground cinnamon
- 1tbsp ground mixed spice
- 1tbsp 100% Fruit Spread (1½ Syns) (or 1tbsp honey - 3 Syns)
- 2tbsp granulated sweetener, or to taste
- Fry Light

1. Method
1. Pre-heat the oven to 180C / 350F / Gas 4.

2. Mix all of the ingredients (except the Fry Light) together with a spoon.

3. Spray a small loaf tin with Fry Light. Pour in the cake mixture.

4. Cook in the pre-heated oven for 30 minutes, or until a knife inserted into the centre of the cake comes out clean.

5. Leave in the tin to go cold. This cake is best eaten the next day.
