- 4 chicken quarters, skinned
- 175ml (6fl oz) very low fat natural yoghurt
- 1tsp garam masala
- 1tsp ginger pulp
- 1tsp garlic pulp
- 1½ tsp chilli powder
- ¼ tsp ground turmeric
- 1tsp ground coriander
- 1tbsp lemon juice
- 1tsp salt
- few drops of red food colouring
- Fry Light
- Mixed salad leaves and lime wedges, to garnish
1. Method
1. Rinse and pat dry the chicken quarters. Make two deep slits in the flesh of each piece, place in a dish and set aside.
2. Mix together the yoghurt, garam masala, ginger, garlic, chilli powder, turmeric, coriander, lemon juice, salt, red food colouring and a few sprays of Fry Light, and beat so that all the ingredients are well combined.
3. Cover the chicken quarters with the spice mixture and leave to marinate for about 3 hours.
4. Preheat the oven to 240C / 475F / Gas 9. Transfer the chicken pieces to an ovenproof dish.
5. Bake the chicken in the oven for 20-25 minutes or until the chicken is cooked right through and evenly browned on top.
6. Remove from the oven, transfer to a serving dish and garnish with the salad leaves and lime wedges.
Note: The traditional bright red colour is derived from food colouring. This is only optional and may be omitted if you wish.
