Tarragon citrus mahi-mahi

1 pink grapefruit
1 tangerine
1 blood orange or regular orange
2 T. schooled fresh tarragon
4 (4 to 6 oz.) pieces mahi-mahi(any white fish-grouper, snapper or halibut.
kosher salt and freslygroun pepper
2 T. olive oil

Prep. Time → 15 min

Cook Time → 8 min

1. 1. Remove the peel, pith and outer membrance of each fruit.
2. Working over the bowl, slice each into segments and remove the seeds.
3. Dice the segments into the bowl. Stir in the tarragon.
4. Cover and refrigerate until ready to serve.
5. Season the mahi-mahi withsalt and pepper.
6. Heat the oil in a nonstick skilllet over high heat. Sear the fish in each side until opaque in the center, about 3-4 minutes per side depending on thickness.
7. Transfer the fish, to serving plates, top with a large spoonful of the citrus salsa, and serve immediately.
