Thai noodle salad
Recipe bycooked noodles, drain and set aside
cooked chicken , cubed
1/2 cup sugar
1/2 cup water
1/2 cup cider vinegar
1 to 2 cloves minced garlic
2 tablespoons soy sauce
1 tablespoon Thai red pepper paste or chili sauce to taste
4 tablespoons vegetable oil
chopped cilantro
chopped green onions
carrots sliced thin
cucumber sliced thin
red pepper sliced thin
Prep. Time → 10 min
Cook Time → 20 min
1. DRESSING: combine sugar, water, cider vinegar over medium heat. Boil 2 min.
2. add garlic soy sauce and red pepper paste. Cook 1 min. and remove from heat.
3. Add vegetable oil, cilantro, onions, carrots, cucumbers, and red peppers. Let sit to slightly softened the vegetables.
4. Toss with noodles and chicken and serve.
5. This recipe can be served at room temperature cold or hot.
