Thai red beef curry

350g lean cut of beef (in small pieces)
200g of frozen green beans and carrots
3 tablespoons of Red Thai curry paste (4 syns) syns may vary
2 tablespoons of fish sauce
600ml of So delicious or Kara Coconut Milk (2xHEa)
2 sticks of lemon grass
2 red chilli’s, finely chopped
1 tablespoon of brown sugar (3 syns) or use sweetener if you prefer
2 tablespoons of tomato paste (1 syn)
fresh coriander
Pam or Frylight spray
NOTE: A serving when using the Kara Coconut Milk is not quite a full HEa, so be sure to get the rest of your HEa elsewhere into your day.

2. Spray a wok with some Pam or Frylight spray and lightly brown the beef, remove and set aside
Add the coconut milk and slowly heat, once it begins to boil, add the Red Thai Curry Paste and mix thoroughly.
Add the fish sauce, chilli’s, lemon grass, brown sugar and tomato paste. Then return the beef.
Bring to a boil, reduce heat, add the frozen green beans and carrots, cover and simmer until meat is thoroughly cooked through and sauce has reduced and thickened.
Serve topped with fresh coriander.
