Tiger prawn, calamari and baby scallop ceviche
Recipe by8 small tiger prawns, cleaned, tails on
8 small calamari tubes
8 small scallops
freshly ground black pepper, to taste
juice of 1 lime
herb salad
15ml fresh flat-leaf parsley, chopped
15ml fresh coriander, chopped
15ml fresh dill, chopped
15ml fresh chives, chopped
15ml fresh chervil, chopped
dressing
half tomato, diced
15ml olive oil
Prep. Time → 10 min
Cook Time → 10 min
1. using large mixing bowl, combine tiger prawns, calamari and scallops with black pepper and lime juice
2. cover with plastic wrap and refrigerate for 5min
3. herb salad:
toss all the herbs together in a bowl
4. dressing:
place tomato in mini food processor together with olive oil and blend to form a puree
5. to serve:
place a ring cutter into serving plate and fill with herb salad, place marinated calamari, prawn and scallops on top of herb salad and carefully remove ring cutter
6. dress ceviche with tomato dressing
