Toffee Apple Muffins of Mario De-Cristofano - Recipefy

2 free range eggs,
80g caster sugar
240ml milk
100g melted butter
300g plain flour
2 tsp baking powder
1/2 tsp salt
pinch of cinnamon
2 eating apples
200g toffee pieces

Prep. Time → 20 min

Cook Time → 30 min

1. Preheat the oven to 190c, (gas 5) and line a 12 hole muffin tin with paper cases
mix the eggs, sugar, milk and melted butter in a large bowl. Sift the flour, baking powder, salt & cinnamon into the bowl. Stir well to combine.
Add the finely chopped apple ( you chopped the apple, right?)

2. Now, using half of the mixture, quarter fill each of the muffin cases, and then chop up some of the toffee pieces and pop over the top and then carry on and fill up the muffin cases with the rest of the mixture so they are just over half full.

3. Bake for 35 minutes until well risen and golden. Transfer to a wire colling rack to cool. Serve warm or cold, either way they are the business!
