Tomato soup
Recipe by2 x 450g tins chopped tomatoes
1/4 tsp cumin
1/4 tsp ground coriander
1/2 tsp garam masala
2 tsp sugar
Small box passata
Tbsp olive oil
2 tsp bouillon or veg stock
Chopped onion
Any leftover veg chopped or a bit of carrot, broccoli etc
Basil, thyme or oregano
Fresh cream
1. Heat the oil and fry the onions until clear.
2. If using peppers, add now and fry for give mins.
3. Add the remaining veg, fry for five mins if raw, otherwise add the tomatoes too and heat through.
4. Add the stock, spices, sugar and simmer for five mins.
5. Tip into a blender and whirr until smooth.
6. Return to the pan and warm through.
7. Season to taste and add passata if more tomato flavour required, then simmer for five mins.
8. Serve with a swirl of cream in.
