Tomatoes, Parsley And Black Beans Fettuccini of Only Gluten Free Recipes - Recipefy

2 tbsp. extra virgin olive oil
4 organic garlic cloves, chopped
1 bunch organic curly parsley, chopped
1 tbsp. organic GF dried oregano leaves
1 tsp. organic GF sweet paprika
4 organic ripe beefsteak tomatoes or
8 ripe organic roma tomatoes, diced
2 cup cooked organic black beans (if you are using canned make sure to drain and rinse them well)
Pinch of organic GF cayenne pepper (optional)
Sea salt to taste
Fresh organic basil, torn into small pieces
1 lb. GF brown rice fettuccini (cooked as per package instructions)
Freshly grated Parmesan cheese (optional)

Prep. Time → 3 min

Cook Time → 15 min

1. Add olive oil into a large saucepan and heat, then add garlic and parsley, while stirring sauté for 3 minutes

2. Add oregano leaves and paprika and cook another minute, then add tomatoes bring to boil turn to low heat and simmer for 15 minutes

3. Add black beans, salt and cayenne and cook 5 more minutes

4. To serve place noodles on a warm platter, pour sauce over and sprinkle with fresh basil, you can add Parmesan cheese on top but it tastes delicious without it.
