Tuscan chicken stew
Recipe by1/2 tsp fennel seed
1 tsp basil
1 tsp minced garlic
1 tsp rosemary
1/2 tsp oregano
1/2 tsp pepper
2TBSP olive oil
1 1/2 lds. Boneless chicken, cut into 1 inch cubes
1 medium onion , cut into wedges
1 - 15 ounce can white beans, drained and rinsed
1- 14.5 ounce can diced tomatoes, undrained
1/4 cup water
1 tsp salt
6 ounces of baby spinach (2 large handfuls)
Prep. Time → 15 min
Cook Time → 25 min
1. 1- heat oil in large pan on medium high heat. Add chicken; cook 10 minutes or until browned. Remove chicken from skillet. Add onion and fennel seed, cook and stir on medium heat 5 minutes or until tender
2. 2- stir in beans, tomatoes, water, remaining spices and salt. Bring to a boil, stirring frequently. Reduce heat to low, cover and simmer 5 minutes. Return chicken to skillet.
3. 3- stir in spinach. Cover. Cook 5 minutes or til spinach is wilted.
