Tzatziki
Recipe by1 cucumber
1 C. plain Greek yogurt
2 cloves minced garlic
1/4 tsp. salt
1 TBSP lemon juice
Prep. Time → 15 min
1. Peel the cucumber and cut in half lengthwise. Remove seeds using a spoon then grate the cucumber into a cheesecloth over a bowl. Squeeze as much liquid out of the cucumber as possible. (I have tried different things, and cheesecloth by far works the best, however if you don't have any, you can use a clean coffee filter).
2. Once cucumber has been drained, put it in a small bowl. Stir in the yogurt, garlic, salt and lemon juice.
3. Chill for at least 30 minutes in the fridge before serving to develop the flavour (the longer you can leave it, the better).
4. Serve with Greek chicken, veggies and pita bread.
