Upside down apple, cinnamon and butterscotch cake
Recipe by
150g butter
3/4 cup brown sugar
5ml vanilla essence
45ml fresh cream
4 Granny Smith Apples, skin on and sliced in half cm disks
100g butter
200g castor sugar
2 large eggs, separated
half cup milk
1.5 cup cake flour
10m baking powder
pinch of salt
2.5ml ground cinnamon
extra apples and butterscotch to garnish
15ml vanilla essence
Prep. Time → 20 min
Cook Time → 40-50 min
1. Preheat oven to 180celcius
2. grease deep 22cm cake tin
3. butter and sugar in sauce pan.
4. Stir till sugar is melted
5. allow to bubble till thick and golden brown
6. stir in vanilla and cream and remove from heat
7. pour Butterscotch on cake tin
8. Arrange apple slices on top of butterscotch
9. use all the apples even if it does make more than 1 layer of apple
10. cream butter and sugar till pale and fluffy
11. whisk egg yolks, milk, flour, baking powder, salt, vanilla and cinnamon till smooth
12. whisk egg whites till soft peeks form
13. fold into batter
14. pour over apples and bake till cake pulls away from edges (40-45min)
15. remove from oven and allow to cool
16. turn out cake and decorate with extra apple and butterscotch
