Upside down strawberry cake
Recipe by
250ml berry juice
125ml brown sugar
500ml strawberries, halved
30g butter
210g self raising flour (1 and a half cups)
140g brown sugar
180ml milk
80ml oil
1 large egg
10ml vanilla extract
Prep. Time → 25 min
Cook Time → 30 min
1. preheat oven to 180C. Line bottom sides of 24cm cake tin with baking paper
2. heat juice and sugar in saucepan and stir until it bubbles. Allow to bubble until thick and syrupy, about 5-10min
3. add halved strawberries and pour this mixture into lined cake tin
4. Add knobs of butter on top and place tin in fridge while you prepare the cake batter
5. whisk rest of ingredients together until smooth
6. pour cake batter over back of large spoon into cake tin. It is important to try and let the 2 mixtures mix as little as possible as you want berry mixture to remain on top of cake when turned out
7. bake for 25-30min or until done
8. leave to cool in tin for 10min and then turn out onto serving plate
