Vanilla fudge in the microwave
Recipe by500g caster sugar
5ml vanilla essence
1 tin condensed milk (400g)
100g butter
Prep. Time → 1 min
Cook Time → 12 min
1. Line a square or rectangular small baking tray with foil and lightly grease the inside. If you don't have a small baking tray you can just fold up the sides to make a wall.
2. Use a large microwaveable bowl as this has a tendency to rise up and bubble crazily
3. Mix the butter, milk and sugar in a large, microwaveable bowl.
4. Microwave on high for two and a half minutes or until the butter has melted. Stir.
5. Microwave on high for 10 minutes, pausing every 2 minutes to stir.
6. Add the vanilla essence during the last stir.
7. Remove from the microwave and pour the mixture into a greased shallow tin.
8. Cool at room temperature and cut into squares when cooled.
