Veg fried rice
Recipe byRice-2 cups
Lemon Juice-1 tspn
Carrot-2 cut to small cubes
Celery-1/4 cup chopped
Mushroom-5-6 cut to small cubes
Sweet corn-1/4 cup
Pepper powder-1/4 tspn
Butter-3 tblpsn
Soya sauce-1 tspn
Salt
1. 1.Steam carrot and sweet corn till they are soft and keep aside.
2. 2.Heat 1 tblspn butter in a pan and stir fry mushrooms and celery.Sprinkle enough salt and stir continuously till they are cooked well .Remove from fire and keep aside.
3. 3.Wash and soak rice for 15-20 mints.Boil water in a deep pan and add soaked rice to it.Add lemon juice and salt and cook till the rice is done.Don't over cook rice.Remove from fire,strain excess water and spread the cooked rice in a tray.
4. 4.Heat 2 tblpsn butter in a deep pan and saute the vegetables ( carrot,sweet corn,celery and mushrooms) for 1 mint.Add 1 tspn soy sauce and mix well.Sprinkle more salt if needed.Then add cooked rice and mix well carefully without breaking rice.Cover and cook for 2 more mints in low flame.
Serve hot.
5. Notes: You can use other vegetables of your choice like peas ,beans ,sping onion ,capsicum etc in this.
