Vegan beans & rice

1 cup dried beans

2 tablespoons coconut oil
1/2 bell pepper
2 tomatoes
1/2 tsp hing
2 tsp dried coriander
1 1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric
1 tsp paprika
1 tsp salt
1 tbsp nutritional yeast flakes
1 tablespoon cider vinegar
1/4 - 1/3 cup TVP
3/4 cup water

1 cup uncooked white rice
2 cups water

Prep. Time → 60 min

Cook Time → 30 min

1. Put beans and plenty of water in a medium saucepan on medium high to high and cook until starting to split approximately an hour. Drain and set aside. While beans are cooking chop the tomatoes and bell pepper.

2. In large saucepan warm the oil on medium heat. Add all ingredients except for rice and 2 cups water. Let simmer for a few minutes.

3. Add rice and 2 cups water. Bring to a boil and then simmer for 15 mins or until rice is almost done. Add the beans. Simmer a few more minutes and then serve.
