Vegan truffles
Recipe by3/4 cup raw cashews
3/4 cup cold water
1 lb vegan chocolate
sugar to taste
cocoa powder for coating
1. Put cashews and cold water in a blender and blend on high speed for 1-2 minutes
2. Blend until the mixture is the consistency of heavy cream.
3. Heat chocolate, and any sugar, in the top of a double boiler until completely melted.
4. Cool the chocolate, then slowly stir in the cashews until completely mixed
5. Cool in the fridge for up to 2 hours, not more, it can get hard and unmanageable.
6. Form small balls, roll in cocoa powder and store in the fridge/freezer until completely hardened, about 2 more hours.
