Vegetable stroganoff sw

- Fry Light
- 1 onion, chopped
- 1 clove garlic, crushed
- 1tbsp paprika
- 1tbsp tomato puree (½ Syn)
- 100gm (3½oz) sliced mushrooms
- ½ green pepper, deseeded and chopped
- 113gm (4oz) Morrisons vegetable & pasta mix
- 400gm tin chopped tomatoes
- Salt and freshly ground black pepper
- 1ltr (1¾pt) stock, made with Vecon or chicken Bovril
1. Method
1. Heat a large saucepan sprayed with Fry Light and gently fry the onion and garlic gently for a couple of minutes. Add paprika and tomato puree and continue frying over a low heat for 2 minutes.
2. Add mushrooms and pepper and stir well until coated. Stir in tomatoes and simmer for 2-3 minutes. Add vegetable & pasta mix and stock and bring to the boil. Reduce heat and simmer for 40 minutes. Season to taste.
