Vegetarian chili with squash
Recipe by3 cans Kidney beans -do not drain
2 cans crushed tomatoes -do not drain
2 cans cannelli beans- do not drain
1 can black beans- do not drain
2 red peppers - chopped & sautéed
3 large garlic cloves- chopped & sautéed
1 1/2 onions chopped & sautéed
2 cups butternut squash- cubed small and sautéed
1 small can tomato paste
1/4 cup ketchup
5 fresh basil leaves
taco seasoning to taste
chili powder to taste
cumin to taste
salt to taste
balsamic vinegar to taste- don't put too much in
Garnish with :Cilantro, Shredded cheese, sour cream, green onions
Prep. Time → 25 min
Cook Time → 120 min
1. Cut & sautée peppers, onions, garlic and squash
2. Add sautéed and remaining ingredients to large pot
3. Bring to a boil
4. Reduce heat and cook low for 2 hours- stirring often
5. Can be prepared 1 day in advance
6. Serve hot w Cilantro, Shredded cheese, sour cream, green onions
7. Delicious w cornbread!!!
