Vegetarian tikka stuffed mushrooms

4 Large Mushrooms
4 Large Tomatoes
4 Cloves Garlic
1 Large Onion
250g cold Boiled Rice
200g Humus
Pataks Tikka Masala Paste
45g Pine nuts
Desert spoon of chilli oil or olive oil
Fresh Coriander
Salt and pepper
Prep. Time → 5 min
Cook Time → 25 min
1. Method
1. Finely chop and fry onions in the oil for 10 minutes or until golden (I prefer the chilli oil as it gives it a bit of a kick)
2. Crushed garlic and add with 2 teaspoons of tikka paste (add more for a more intense flavour)
3. Lightly toast the pine nuts then stir in with the rice and Humus while heating gently season with salt and pepper to taste.
4. Turn off the heat and place to one side
5. Clean and prepare the mushrooms by removing the stalks
6. Generously fill the mushrooms and place in an oven 200˚C, Fan 180 ˚C gas 5 375 F for 15 minutes
7. Finely chop the tomatoes and mix with chopped coriander serve with a sprinkling of coriander
