4 tortilla wraps,
60g (2oz) cheddar cheese, grated
SALSA
2 Tomatoes, Diced
2 Spring Onions, Finely Sliced
2 Tsp Lemon Juice
1 Tsp Olive Oil
1/4 Red Chilli, Deseeded And Diced
1 Tbsp Chopped Coriander
FILLING
1 Medium Red Onion
1/2 Red Pepper
1/2 Yellow Pepper
1/2 Orange Pepper
1 Tbsp Sunflower Oil
1/8 Cumin
Pinch Of Paprika
1 Tbsp Balsamic Vinegar
2 Tsp Soft Light Brown Sugar
Salt And Pepper
Prep. Time → 20 min
Cook Time → 5 min
1. To make the salsa, simply mix the ingredients together in a bowl.
2. For the filling, thinly slice the onion. Deseed and thinly slice the pepper.
3. Heat the oil in a wok or a large frying pan and stir-fry the onion and peppers for about 4 minutes until soft. And the cumin and paprika and cook for 1 minute, then stir in the balsamic vinegar and boil until evaporated . Stir in the sugar and the season with salt ad pepper.
4. warm the waps in the microwave or dry frying pan, then divide the fillings between them.
5. start with the onion and pepper mixture then spoon over the salsa. Next, scatter over the grated cheese ad finally roll up your wrap! you can serve with soured cream
