Veggie jambalaya sw

- 1 onion
- 1 green pepper
- 2 celery sticks
- 2 garlic cloves
- 568ml (1pt) Vecon
- 2 x 400gm cans chopped tomatoes
- 1tsp hot chilli powder
- salt & freshly ground black pepper
- 255gm (9oz) long grain rice
- 300gm pack Quorn pieces
- 198gm can sweetcorn
- 4tbsp freshly chopped parsley
1. Method
1. Roughly chop the onion, pepper and celery & crush the garlic. Place in a large pan with the stock, bring to the boil, cover and simmer for 5 minutes.
2. Add the tomatoes, chilli powder and seasoning to taste & bring back to the boil.
3. Stir in the rice, Quorn pieces and sweetcorn, cover and cook over a low heat for 15 minutes. When the rice is tender and most of the liquid has been absorbed, stir in the parsley & serve.
