Zucchini fritters with chili lime mayo

Fritters
Vegetable oil
3C grated zucchini
1C diced onion
2 eggs
1C all purpose flour
1 tsp baking powder
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp pepper

Chili Lime Mayo
1C mayo
Juice of half a lime
1/2 tsp chili powder

1. Combine zucchini, onion, & eggs in a large bowl. Stir until kind of frothy.

2. In another bowl, combine flour, baking powder, chili powder, salt, & pepper.

3. Slowly stir dry ingredients to wet ingredients a little at a time until we'll combined.

4. Add about 1/2 in vegetable oil to a skillet & turn to medium heat.

5. When oil is hot, drop by spoonfuls (not too big) into hot oil & brown, about 2-3 minutes. Flip & brown other side.

6. Put on plate lined with paper towels to absorb grease after frying.

7. Chili Lime Mayo:

8. Combine & stir mayo, lime juice, & chili powder in bowl. Refrigerate. Best if refrigerated overnight.
