Zuccini Soup of Kitchen Snippets - Recipefy

Zuccini-1 medium( remove the skin and cut into small pieces )
Garlic-5 podes( small)
Onion-2 tblpsn chopped
Pepper powder-1/2 to 3/4 tspn
Salt
Oil

To make vegetable stock

Cabbage-2 tblpsn chopped
Onion-1 tbpsn chopped
Beans-3 chopped
Garlic-3 podes chopped
Water- 1 1/2 cup
Salt

Prep. Time → 5 min

Cook Time → 10 min

1. Add the ingredients listed to make vegetable stock in a pressure cooker.Cook for 4 whistles.

2. Meanwhile,heat little sunflower/vegetable/olive oil in a pan.Add chopped onion,garlic and zuccini.Cook till the zuccini becomes soft.
(the onions shouldn't get brown).Remove from fire and let it cool down.Now grind it to a smooth paste.

3. Add this paste to the vegetable stock,sprinkle enough salt and cook till the soup gets the desired consistency.Add pepper powder and
mix well and remove from fire.

4. Notes:If you like the soup to have a thick consistency,mix 1 tspn cornflour in 1/4 cup of water,mix without lumps,and add to the soup.
Stir continuously till the soup gets a thick consistency.
