Baked cranberry almond chicken
Receta por4 thin sliced boneless skinless chicken breast (ok you'll have an extra piece...), about 1 cup of flour, salt, black pepper, 4 egg whites, 1/2 bread crumbs, 1/4 cup craisins diced, 1/4 roasted almonds diced, 1/8 cup dried chives diced, dash of ground ginger (give or take depending on personal tastes), dash of garlic powder (again give or take depending on personal tastes)

T. Cocinado → 15-20 min
1. Preheat oven to 375
2. Mix in flour and salt and pepper to taste in one bowl
3. In a second bowl, separate four egg whites and beat with a fork until froth forms
4. In a third bowl combine diced craisins, diced almonds (see below)*, bread crumbs, ginger, and diced chives.
5. *I had whole roasted almonds and had to crush them with the side of the knife (like you would a garlic clove) before I diced them so they didn't go everywhere
6. Coat chicken breast in flour and tap to shake off extra. Drop into beaten egg whites and again shake off excess, third coat with bread crumb mixture before landing in a pre-greased baking sheet of pan (I covered mine with foil first before greasing)
7. Bake in the oven until chicken in tender and coating is nicely browned, about 15-20 minutes
