Beef casserole

1lb Braising/casserole steak trimmed and cubed
2 large leeks washed and sliced into rings
1 medium Swede peeled n cubed
2 large carrots peeled n sliced
2 bouquet garni
2 beef stock cubes
2oz flour
1 bottle Newcastle Brown Ale
salt n freshly ground back pepper

T. Preparacion → 20 min

T. Cocinado → 150 min

1. On a plate mix the flour, salt n pepper. Roll the cubed steak in the flour til it all looks like turkish delight.

2. Switch on the oven to 150C. while its warming.....

3. In an oven proof pan heat 2 tbsp beef dripping on the hob.

4. when the dripping has melted and is quite hot add the steak cubes and "stir fry" til browned all over.

5. Turn the heat down, add a good splash of red wine and stir to deglaze the pan (get all the sticky bits off thebottom)

6. Add all other ingredients and stir well.

7. Cover the pan and put it in the oven and cook for 2.5 hours

8. after 1.5 hours check the casserole and give it a stir. if it seems dry, add a bit of water or bisto granules mixed in water, just enough to cover the meat and vegetables.

9. Return to the oven for the remaining hour.

10. Meanwhile make up some fresh mashed potatoes, with plenty of butter and keep warm.

11. Serve casserole with the Mash.
