Black bean salad
Receta por1 red bell pepper diced
1 green bell pepper diced
1 yellow bell pepper diced
1/2 cup diced red onion
2 cloves garlic minced
1 tsp cilantro
1/4 cup of olive oil
4 tbsp red wine vinegar
1 tsp lime juice
2 cans (15 oz) black beans - rinsed and drained
1. While beans drain, lightly saute onions, peppers, and garlic in olive oil (Do not saute until tender, just for a few minutes, to cut the strength of the raw onions).
2. Dump veggies (with oil; this is the oil for the dressing) over beans in a bowl, add cilantro, and dressing.
3. Serve with tortilla scoop chips.
