Butternut with walnuts and vanilla
Receta por2kg butternut, cubed
45ml olive oil
salt to taste
3 bay leaves
45ml butter
60ml roasted walnuts
10ml fresh grated ginger
15ml vanilla extract
juice of half lemon
10ml dried thyme
freshly ground black pepper to taste
T. Preparacion → 10 min
T. Cocinado → 20 min
1. preheat oven to 200 celcius
2. put butternut in mixing bowl, toss oil to coat and sprinkle salt
3. add bay leaves and spread on baking tray
4. roast till cubes are golden (20min)
5. melt butter in frying pan, add walnuts and toss to coat with butter
6. remove bay leaves, add butternut to walnut mixture and stir to combine
7. mix in ginger, vanilla, lemon juice, thyme and black pepper
