Chicken and rice in the oven
Receta por2 sweet potatoes cut into circles
2 onions cut into slices
1 package of sliced mushrooms
Chicken ( legs & thighs )
3/4 cup of water
Ingredients for the rice
1 cup of rice
1 1/2 cups of water
2 carrots grated
1 eggplant peeled and cubed
1 medium onion chopped
1 small can of tomato paste
1 teaspoon sweet paprika
sugar
chicken consomme
salt & pepper
Chicken Marinade
olive oil
2 teaspoons sweet paprika
crushed garlic
cumin
chicken consomme
salt & pepper
T. Cocinado → 60-120 min
1. Let the chicken marinade in the above ingredients for 30 minutes.
2. Fry the onion for 2 min. Add the eggplant and fry for 5-10 minutes and then add the carrots for another 2 minutes.
3. Add the rice, water, tomato paste, paprika, sugar, chicken consomme, salt and pepper.
4. Bring to a boil and then lower the fire and cover for 10 minutes and then remove from fire.
5. Fry the garlic and mushrooms in a separate pan.
6. Take the dish you are going to use to bake the chicken and lay the pieces of sweet potato on the bottom. Cover the sweet potatoes with the rice. On top of the rice add the mushrooms and onions and then place the chicken pieces last.
7. Cover with foil and bake at 375 degrees F for 1 hour.
8. Remove the foil and bake until the chicken is done.
