- 454gm (1lb) boneless chicken, skinned and cubed
- 1tsp ginger pulp
- 1tsp garlic pulp
- 1tsp chilli powder
- ¼ tsp ground turmeric
- 1tsp salt
- 142ml (¼ pt) natural very low fat yoghurt
- 4tbsp lemon juice
- 1tbsp chopped fresh coriander
- Fry Light
For the garnish
- mixed salad leaves
- 1 small onion, cut into rings
- lime wedges
- fresh coriander
1. Method
1. In a medium bowl, mix together the chicken pieces, ginger, garlic, chilli powder, turmeric, salt, yoghurt, lemon juice and fresh coriander and leave to marinate for at least two hours.
2. Place in a grill pan or in a flameproof dish lined with foil & spray with Fry Light.
3. Preheat the grill to medium. Grill the chicken for 15-20 minutes until cooked, turning several times. Serve on a bed of mixed salad leaves, garnished with onion rings, lime wedges and coriander.
