Chocolate flourless cake

12 oz bittersweet chocolate
3/4 cup unsalted butter
5 large eggs
1 cup granulated sugar
1 1/2 tsp vanilla
1/4 tsp salt
1/4 cup unsweetened cocoa powder, sifted
For the Glaze
4 oz bittersweet chocolate
3 tablespoons unsalted butter
1. Preheat oven to 300 degrees F.
2. Lightly butter the bottom of a 9 inch round cake pan and line it with parchment. Lightly butter the parchment and the sides of the pan and dust with cocoa powder
3. Melt the chocolate and butter in the microwave. Remove the bowl mix well and set aside to cool.
4. In the bowl of a stand mixer, combine the eggs, sugar, vanilla, salt and 2 tablespoons of water. Beat on medium high until the mixture is foamy and about double in size.
5. Reduce speed to low and gradually pour in the chocolate mixture. Increase speed to medium and continue beating until well blended.
6. Add the cocoa powder and mix until blended.
7. Pour the batter into the pan and bake 40-45 min.
8. Once ready let cool for 30 min. If necessary push down edges with your fingertips.
9. Invert the cake onto a plate and remove the parchment paper. Cover and refrigerate until cake is very cold.
10. Glaze for the cake:
Melt the chocolate and butter in microwave. Pour the warm glaze over the chilled cake.
11. Refrigerate the cake until the glaze is set.
