Christmas spiced Biscuits de Sally Newbold - Recipefy

200g butter (unsalted or salted, it's your preference really)
350g Self raising flour sifted
175g Light muscavado Sugar
1 medium egg Beaten
1 tsp Vanilla Extract
1 tsp Lemon Essence
1tsp Ground Cinnamon
1/2tsp Nutmeg
half a cup of sultana's soaked in Amaretto (soak the night before for best results)

T. Preparacion → 40 min

T. Cocinado → 10 min

1. Using an electric whisk, mix the Butter and Sugar until the colour lightens

2. Add the beaten egg, Vanilla Extract and Lemon Essence and continue to mix

3. Add Half the flour and mix, then add the remaining flour, Cinnamon and Nutmeg and combine these into the mixture by hand

4. Split the mixture into a couple of sandwich bags and shape into a sausage, then place into the fridge for half an hour to cool the mixture

5. Once cooled, heat the oven to 200c and line a baking tray with baking parchment

6. Slice the biscuits about an inch thick and lay onto the parchment, using the back of a fork, slightly flatten the biscuit, now place a few of the soaked sultana's onto the biscuit and gently push to avoid any falling off

7. Bake in a hot oven for 10 minutes, once this biscuits have started to colour on the edges remove from the oven and place onto a cooling rack

8. You can keep the raw mixture in the fridge for upto 2 weeks and slice and bake as and when needed, you can also adapt the basic recipe and add cocoa powder and smarties for a chocolate version, or even leave as a basic vanilla biscuit.
I like to grate some orange zest into the mix sometimes or add some dried fruit, either way, their a winner in our house
