1lb ground lamb
1c parboiled brown rice
2tsp salt
1tsp Syrian 5 spice

grape leaves
water
1 heaping tsp citric acid
1tsp salt
1/3c lemon juice

1. Mix first four ingredients together in a medium bowl with your hands

2. Add water slowly until mixture is moist but still sticky

3. Take grape leaves, one at a time and place them in front of you withthe vein side up

4. If there is a stem, remove it

5. Put no larger than a pinky width amount of mixture towards the bottom of hte leaf (if you over fill they WILL explode open when rice expands)

6. Fold in both sides

7. Roll up from the bottom to form a roll

8. Place in a 5Qt pot (or pressure cooker)

9. Repeat with remaining grape leaves, stacking them close together so they stay shut

10. Fill pot with water until just covering tops of the leaves

11. Mix together the citric acid, salt, and lemon juice and pour into the pot

12. Place garlic over the top

13. Place a plate or something with weight over the grape leaves to keep them from floating up

14. Cover and bring to a boil

15. Once boiled, reduce to simmer and cook for 20 minutes (pressure cooker for 12)

16. Test one to see if rice is fully cooked, if not pour off most of the liquid and return to heat to steam for about 15 minutes

17. Test again and keep steaming until done

18. Serve with Greek Yogurt
