Lemon cookies

1. Preheat oven to 350 degrees F

2. Line cookie sheet with parchment paper

3. Beat sugar, vanilla, lemon zest, and better utnil well blended

4. Add eggs, one at a time, beating well after each addition

5. Continue to beat for 1 minute

6. Stir in flour and baking powder

7. Spoon into a pastry bag fitted with a 3/8" round tip

8. Pipe 2" diameter rings onto the cookie sheet

9. With moistened fingertips, press end of rings together to form a smooth ring

10. Bake about 20 minutes or until golden brown

11. Remove from oven and cool on sheet for 2 minutes

12. Transfer to rack and cool completely
