Malaysian satay sauce

2 cloves garlic
2 shallots
2 stalks lemon grass (white parts only)
1 thumb length ginger
1-2 teaspoons chilli powder (depending on heat you like)
5 tablespoons peanut butter
200ml coconut milk
1 tablespoon sweet soy sauce (Kecap Manis – a dark sweet thick soya sauce)
1 tablespoon sugar or palm sugar
1/2 teaspoon salt
1 teaspoon tamarind paste (or juice of a lime)
2 tablespoons vegetable oil

T. Preparacion → 10 min

T. Cocinado → 10 min

1. Combine the shallots, garlic, ginger, chilli and lemon grass for the satay sauce in the blender and mix until nearly smooth.

2. Heat the oil to a medium high heat. Fry the blended mix for 2-3 mins ensuring you do not brown.

3. Add in the peanut butter and let it melt, stirring constantly.

4. Next add in the coconut milk, soya sauce, sugar, salt and tamarind.

5. Simmer on a low heat for stirring for 3-4 mins until smooth.
