Mom's stuffed peppers
Receta por4 medium colored bell peppers
1/2 - 3/4 lb ground turkey
1 small onion
1 10 oz low-sodium tomato soup
2 cups cooked brown rice
1 Tbsp Worcestershire sauce
1 Tbsp Schezuan Spicy Stir Fry sauce
pepper, to taste
Optional: 1/2 frozen corn
T. Preparacion → 15 min
T. Cocinado → 25 min
1. (Cook rice according to package directions.)
2. Cut tops off bell peppers and remove seeds.
3. Steam bell peppers in the microwave (about 5 minutes).
4. Brown turkey and onions in a skillet. Stir in soup (start with about 1 cup, then add more, if needed, to reach desired consistency), rice, and seasonings. Filling mixture should be sticky.
5. Spray baking dish with cooking spray and arrange peppers. Spoon mixture into peppers (if there is extra filling it can be baked in individual oven-safe bowls).
6. Bake at 375 degrees for 25 minutes.
7. Serve with shredded Parmesan cheese.
